Light (but filling) Summer Salad Recipe

Honestly, I’m not a big salad person. I absolutely love vegetables (I’ll pick veggies over sweets any day), but I usually only order salads when we go out to eat. I can never seem to make one at home that satisfies my taste buds and leaves me full. That was, until recently!

I was really craving a salad and decided to pick up the ingredients to make them for work all week. I’ve been hooked ever since!

It’s not that this salad is anything special, or even that I use the perfect amount of each one. Basically, the flavors just go really well together and the ingredients make this more filling than your average salad. Perfect for making it through the long work day (with other snacks of course).

I didn’t add specific measurements for each ingredients because I think it really depends on your taste preferences and how much food you need to eat to feel full. It’s no secret, I eat more than the average person of my size. I know I’m not the only one out there that either eats more or less than others so I think it’s important to make the salad to suit your needs and likes!

The first time I made this salad, I underestimated how filling it would be. I put a ton of greens and by the time I got through them, I was too full to finish the good stuff! I also put way too much dressing so the bottom of the salad was kind of icky. Once I got the hang of my personal salad likes and dislikes, I fell completely in love with this light and filling meal!

I’ve been eating mine with a side of steamed sweet potatoes and sliced apples with almond butter (like I said, I have a big appetite.) Ha! I’m also not sure if I’m the only one that likes to add pepper to my salads, but I love the little extra spice it adds without using a flavored dressing.

I’d love to hear your thoughts on salads and if you try this one out, be sure to share your photos and thoughts with me on Twitter or Instagram!
